Is This Your Jam?
It might be simple, but who doesn't love a good Jam Cake?
Ingredients:
1 cup of plain flour
with 1 teaspoon baking powder
or 1 cup of self-raising flour
1/2 cup of granulated sugar
1/2 cup evaporated milk
1/4 cup jam - your favourite flavour!
1/4 cup of softened butter
1/4 teaspoon salt
1 egg
Instructions:
Prepare the Oven Before the Mix:
Preheat your oven to 175°C (350°F). Grease and flour an 8-inch round cake pan.
Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, and salt.
Cream Butter and Sugar:
In a large bowl, beat the softened butter and sugar together until your mixture is light and fluffy.
Add Egg and Milk:
Beat in the egg until well combined: mix the 2 together with either a hand mixer or stand mixer on a low to medium setting until they are fully mixed and fluffy, when the mixture has turned to a pale yellow. Gradually add the evaporated milk, mixing until smooth.
Combine Wet and Dry Ingredients:
Add the dry ingredients to your wet mixture, mixing until just combined.
Add Your Choice of Jam:
Gently fold the jam into the mix, creating swirls throughout the batter as you go.
Bake Your Masterpiece:
Pour the batter into the prepared cake pan. Bake in the preheated oven for between 25-30 minutes, or until a toothpick inserted into the center comes out clean!
Cool and Serve:
Let your fresh bake cool in the pan for around 10 minutes, then transfer it to a wire rack to cool completely. Feel free to serve the cake plain or with an extra dollop of jam on top!
